In peak season (June–July), puffins are constantly active launching off the cliff, wheeling out to sea to fish, and returning with bills full of capelin held crosswise. Elliston’s second extraordinary distinction is its 135 preserved historic root cellars underground storage structures built into the hillsides by early settlers to preserve vegetables, preserves, and other food through the winter.
